Our notes had said to leave this one down another year, but our guests needed another bottle and we decided to take a chance on it. Immediately upon opening we were glad we did, and our guests praised it to the skies, even though we thought it still had a little of the powdery character that led us to put it down in the first place. But after 20 minutes of breathing that had all smoothed out and it was all spice and solid backbone and long smooth melodic finish. So if you bring yours up before next spring be sure to let it breathe before serving, or decant it. We were serving a low-carb minestrone (one guest was diabetic) and this went perfectly with the sausage and tomato acid.
