Our winery facility combines old-world tradition and modern technology.... wait, wrong picture....



Twisted Oak Winery! - Vallecito

(That's better!) Built on a hillside, Twisted Oak Winery uses old-world gravity flow techniques, allowing gentle movement of the grapes, juice and wine throughout the winemaking process. The grapes are received and carefully inspected at the top level. A hopper then drops the grapes to the crusher located on the level immediately beneath it. A pump gently nudges the must in through the top of the fermentation tanks on the next level down.



El Farmo del Tanko

We use a pneumatic "punch-down" device during fermentation in place of the traditional "pump-over" to ensure better extraction of phenols, tannins and anthocyanins (the good stuff!). This device is powered by compressed air in order to punch the floating cap of skins down in to the fermenting juice. By minimizing the use of pumps, the resulting wines show softer tannin structures, greater body and more intense color.



That's really our cave!

After fermentation the wines are pressed off of the skins and gravity-flowed down into barrels in our 4200 square foot wine storage cave for aging. The cave provides the perfect temperature and humidity needed to ensure the proper maturation of the wine.
